Healthy Homemade Chinese Food Served Over Quinoa


I LOVE Chinese food but it tears my stomach up. Here is an easy to prepare and clean recipe that helps fulfill the cravings for Chinese food without the massive amounts of sodium or stomach aches.

Prepare 1 cup cooked quinoa (serves 4-5 people)

In a wok, cook 1lb of chicken breast or thighs in avocado oil until half cooked. Then throw in and sauté:

1 cup of raw broccoli
1 cup of snap peas
1 cup of sliced carrots
1 cup of sliced mushrooms
2 cups of sliced bok choy
2 garlic cloves

Once the vegetables are half cooked (carrots slightly softened), add in sauce:

1TBS raw honey
1 tsp paprika
1/2 tsp ground ginger
2 tsp Bragg's Aminos (soy sauce)
dash of pepper

Continue to cook at high heat in the wok stirring often until meat is cooked through and carrots are softened but not soggy. Remove and serve warm over a bed of cooked quinoa. Enjoy!
