Almond, Hemp Seed Baked Acorn Squash

This is a hearty, comfort food side item that is quick and easy to make and is vegan, vegetarian, gluten-free and paleo friendly:

Pre-heat oven to 400 degrees F
Slice acorn squash about 3/4 inch thick
Clean any seeds out
Prepare a baking sheet with parchment paper
Brush melted butter or avocado oil on both sides of the acorn squash
Sprinkle both sides with ground cinnamon
Sprinkle with salt and pepper
Bake until soft to put a fork through, usually 20-25 minutes. Turn half way through.
Sprinkle with hemp seed and sliced raw almonds and bake 5 more minutes
Optional:Drizzle a little maple syrup on for a sweet touch
