5 Gluten-free and Paleo Super Bowl Party Foods



In honor of Super Bowl Sunday this weekend, below are 5 healthy gluten-free and paleo appetizers, snacks and deserts for your party! All of them are gluten-free and some are strictly and/or loosely paleo (depending on if you eat dark chocolate or not). Enjoy!



  
Paleo BBQ Sauce
2 cloves of garlic, minced
1/2 medium-large sweet onion, minced
2 TBS coconut oil
24 ounces organic (no sugar added) spaghetti sauce (tomato puree, diced tomatoes, spices & veggies)
2 TBS maple syrup
2 TBS honey
1.5 TBS Braggs or Coconut Aminos
1 TBS paprika
1/4 tsp cinnamon

Saute garlic and onion in grapeseed oil in a sauce pan until softened. Add remaining ingredients. Bring to boil, stir often, lower heat and simmer at low heat for 20-30 minutes.

Paleo/Gluten-free Meatballs
1 lb grass-fed ground beef
2-3 TBS flax meal (or coconut flour)
1 large free-ranged egg
Italian seasonings, salt, pepper, garlic powder and onion powder (season to your liking, I use around anything from a dash to 1/2 tsp for each spice)

Mix all ingredients together in a bowl. Roll into golf ball size meatballs. Place on parchment paper and bake at 350 degrees F until cooked through. Add meatballs to BBQ sauce in saute pan and simmer at low heat for an additional 15 minutes. Serve with sauce. Yields about 26-30 meatballs.



Homemade Mayonnaise Recipe

1/4 cup apple cider vinegar
1/2 cup olive oil
1 hard boiled egg
1/2 tsp curry powder
1/2 tablespoon mustard
1-2 tablespoon raw almonds

Place all ingredients into a food processor (we use a Vitamix) and blend until almonds are all mixed in. Add more almonds to thicken, but the mixture will thicken in refrigerator after about 15 minutes.

Buffalo Chicken Salad
Free-ranged organic chicken breast (boiled in water until cooked through, cooled off and pulled)
Homemade Mayonnaise (recipe above)
Hot Sauce
Sliced celery
Salt and pepper to taste

Mix all ingredients together and place in refrigerator about 30 minutes before serving. 



Angelic-Deviled Eggs
6 large free-ranged organic eggs
1/3 cup Homemade Mayonnaise
1/4 tsp hot sauce
salt & pepper to taste
paprika

Hard boil eggs, peel, cut in half and remove yolks. Place halved egg whites on plate and egg yolks in a bowl. Mix egg yolks, homemade mayonnaise, hot sauce and pinch of salt and pepper in bowl with fork or in food processor (we use our Vitamix). Spoon yolk mixture into the egg whites and sprinkle with paprika. Place in refrigerator to chill, serve chilled. Yields 12.


 

Raw Fruit & Nut Recipe
3/4 cup organic raw almonds
8 ounces of organic dried apricots
1/2 cup organic shredded coconut
1 tablespoon and 1 teaspoon of raw cocao powder (which is raw cocoa)

Place all ingredients into a food processor (we use a Vitamix blender) and blend until fruits and nuts are broken down into very small pieces, the little extra bits add a great texture. Mixture should hold together and can be molded into a big ball in your hands when you take it out. Taste and add anything if needed. Place ball of mixture between two sheets of parchment paper and roll out with a rolling pin until about 1/2 - 3/4 inch thick. Shape into a square to cut bars easier. Top with extra coconut shavings if desired. Store in air tight container.



REAL Foods Party Dessert
1/2 cup organic almond butter
1 1/4 shaved organic coconut
1/3 cup raw honey
1/2 cup organic flax meal (or almond flour)
1/4 cup dried organic currants (or other dried fruit w/out sugar added)
1/4 cup organic raisins
1 tsp organic vanilla
1 tsp organic cinnamon
3/4 cup organic raw sunflower seeds
2 ounces of extremely dark organic chocolate

Mix all ingredients together in a bowl until blended (you will probably need to use your hands). Let chill in the refrigerator for about 30 minutes. Roll into balls. Melt chocolate. Dip balls into chocolate and drizzle chocolate over top. Chill in freezer for 5-10 minutes, until chocolate is hard. Store in airtight container in refrigerator until ready to serve. Keeps in refrigerator for up to one week.
