Chicken, Kale & Zucchini Soup
Fall is here and tis the season for soups! My husband sadly hates them, something about too much chicken soup when he was sick as a kid, but it doesn't usually stop me from making them (just less often than I would like). One of my favorite new recipes that I came up with after eating a cup of soup from Earthfare on one of their Kids Eat Free nights is a chicken, kale and zucchini soup. Hope you enjoy!

Chicken, Kale & Zucchini Soup
1 whole free-ranged organic chicken
organic chicken stock or bouillon (optional for flavor)
1 head of kale, sliced
2-3 medium sliced zucchini
1 medium sliced onion
5 large peeled and sliced carrots
3 roma tomatoes, cut
1-2 tbs ground cumin
2 bay leaves
salt and pepper to taste

Clean and put whole chicken into a large pot of water. Bring water to boil and let chicken cook. Do NOT throw out the water, it is your stock. Use a spoon with holes to clean out any "floaters" from the chicken. Once chicken is cooked, take whole chicken out carefully.  Let it cool down and pull chicken into smaller, bite size pieces. Put pulled chicken back into the pot of stock. Add veggies and spices. Add more water or stock as needed. Let simmer until all vegetables are cooked through and flavor it right. About 30-45 more minutes on medium to low heat. Serve hot.
