Angelic-Deviled Eggs |
My husband made the kids deviled eggs a while back. I hate the things, but apparently my kids loved them! So the other day I made them for the kids and sure enough, they were a big hit. My blonde roots are going to show now because I never knew why they were called "deviled" eggs since I never ate them growing up. It is because they usually contain what I have coined as the
"devilish" hydrogenated mayonnaise (
no pun intended). So here is a recipe for
Angelic-Deviled eggs since they don't have all the nasty stuff in them. Enjoy!
Angelic-Deviled Eggs
6 large free-ranged organic eggs
1/3 cup
Homemade Mayonnaise
1/4 tsp hot sauce
salt & pepper to taste
paprika
Hard boil eggs, peel, cut in half and remove yolks. Place halved egg whites on plate and egg yolks in a bowl. Mix egg yolks, homemade mayonnaise, hot sauce and pinch of salt and pepper in bowl with fork or in food processor (we use our Vitamix). Spoon yolk mixture into the egg whites and sprinkle with paprika. Place in refrigerator to chill, serve chilled. Yields 12.
