As the saying goes, "If I had a nickle..." for every time someone asked if all we eat are salads and tofu, I'd be a wealthy woman! I'm still not sure about the history of how tofu, the white, jellish-looking, soy product became associated with healthy, but we don't eat tofu at all, and salad's aren't exactly the most common meal in our home. One of my newer cookbook additions has quickly open the door to new favorite recipes that most people would really miss if you did not have a healthier version of this one main ingredient - mayonnaise. I already got on the
"dangers of hydrogenated oils that most conventional mayonnaise contain" kick in a previous post, and even mentioned this recipe in it as well, but I have to post about this recipe again because it just tastes so good! This time I added pictures for you to share on Facebook or Pinterest with your friends because it is the best, and I would argue healthier than most, homemade mayonnaise recipe you will find. It contains probiotics in it from the uncooked organic apple-cider vinegar, healthy fats from the uncooked olive oil, raw almonds and free-ranged egg, and mustard and curry both have anti-inflammatory properties to them.

Homemade Mayonnaise |
Homemade Mayonnaise Recipe
1/4 cup organic apple cider vinegar
1/2 cup olive oil
1 hard boiled free-ranged egg
1/2 tsp curry powder (optional, but tasty!)
1/2 tablespoon mustard
1-2 tablespoon raw almonds
Place all ingredients into a food processor (we use a Vitamix) and blend
until almonds are all mixed in. Add more almonds or an extra hard-boiled egg to thicken, but the
mixture will thicken in refrigerator after about 15 minutes.
Add the mayonnaise to some pulled chicken, pepper, hot sauce and chopped celery, and you've got yourself a tasty buffalo chicken salad. Here I served it with homemade gluten-free sesame & flax seed crackers that I adapted from Dr. Axe's cookbook. And if you haven't heard the great news,
