REAL FOOD Party Dessert Chocolate Bites

Some lady friends shared a recipe with me from a blog, Chef in Training, for No Bake Energy Bites that we just fell in love with in our home. This grain-free recipe is fabulous lunch-time snack to send to school that the kids will love (and their friends will be jealous for!).

Perfect for serving at parties.

So here is my version of a No Bake Energy Bite converted into a grain-free Fruit, Nut & Coconut  drizzled with Chocolate Party Bites:

1/2 cup organic almond butter
1 1/4 shaved organic coconut
1/3 cup raw honey
1/2 cup organic flax meal (or almond flour)
1/4 cup dried organic currants (or other dried fruit w/out sugar added)
1/4 cup organic raisins
1 tsp organic vanilla
1 tsp organic cinnamon
3/4 cup organic raw sunflower seeds
2 ounces of extremely dark organic chocolate

Mix all ingredients together in a bowl until blended (you will probably need to use your hands). Let chill in the refrigerator for about 30 minutes. Roll into balls. Melt chocolate. Dip balls into chocolate and drizzle chocolate over top. Chill in freezer for 5-10 minutes, until chocolate is hard. Store in airtight container in refrigerator until ready to serve. Keeps in refrigerator for up to one week.

Now to finish off the rest of our grilled chicken and raw fruits and veggies with dip for tonight's party!

The kids will love them!
