Delectable RAW Fruit & Nut Bar Recipe

After eating a LARABAR a while back, I looked at the ingredient list and realized I could make this myself! Here is my recipe for a homemade raw fruit and nut bar that my family absolutely LOVES! They are great for road trips or just a sweet change of pace. The recipe I created could be adapted to use different fruit, although apricots are really good because they are not too sweet or as high in sugar as raisins. Dates are also great too. Other nuts can be used as well, we just have a child who is allergic to all other tree nuts besides almonds and coconut.

Raw Fruit & Nut Recipe
3/4 cup organic raw almonds
8 ounces of organic dried apricots
1/2 cup organic shredded coconut
1 tablespoon and 1 teaspoon of raw cocao powder (which is raw cocoa)

Place all ingredients into a food processor (we use a Vitamix blender) and blend until fruits and nuts are broken down into very small pieces, the little extra bits add a great texture. Mixture should hold together and can be molded into a big ball in your hands when you take it out. Taste and add anything if needed. Place ball of mixture between two sheets of parchment paper and roll out with a rolling pin until about 1/2 - 3/4 inch thick. Shape into a square to cut bars easier. Top with extra coconut shavings if desired. Store in air tight container.
